I have just discovered avocados. And, today I got some fresh Ontario Garlic at the farmer's market. So, I figured there had to be a recipe for guacamole that included these two great ingredients.

Well ,I guess there was but I ended up making my own...

One med sized ripe avocado
3 large cloves of Ontario garlic
lemon juice

I put the garlic through a press and mushed it into the avocado and added lemon juice. It was quite good, but waaaaay too much garlic. The Ontario garlic was so strong. I expect I'll be tasting this garlic for the next week or so until it moves through my system.

But, I really liked it as a snack, and with the proper proportions I think I'll have some more soon.

So, Papa, or any other cooks, have you got some good recipes for guacamole for me?
 
Diced jalepeno
Diced red onion
juice from 1/2 lime
chopped up cilantro
mushed avacoda
a pinch kosher salt

mix it all together
 
Very simple

Avacado

Fresh Garlic

Sea Salt

LIME not Lemon Juice

Shallots

Cilantro

Remember the Shallots and the Garlic are to add flavor not take over the dish.
Too much Cilantro tastes like dish soap and not enough is a waste of time.
 
Guac is a great example of the importance of subtlety when it comes to ingredients. The sum of the parts should be greater than the whole. That is to say your first taste should be the sweet creamy Avocado, followed by a bite of the lime and a hint of the shallot not to forget the garlic. The salt is the glue that bind the parts yet you never seem to notice it

The Cilantro is the last thing you taste and it cleans your pallet
