I did a few of the heists that opened up the bonus vehicles from Pegasus etc .... then got bored because there wasn't much to do besides create chaos and grief for other players.

The heists are fun, take some communication, coordination and skill.... but unfortunately that's the endgame material for GTA V Online

in GTA V online you can survive bounties. hijacking cars driven by the non-playable people in the game will set a bounty on you
