I have been just turned onto this food. I was at a friends place and she served it up and showed me how to make it. I'm told from others you can mix it up and cook it so many different ways. Supposedly the health benefits are legendary, I dunno I just like the taste of it.

Anyone with special Quinoa recipes they'd like to share?

Quinoa and Chickpea Salad

I've made something similar to this before. Copying and pasting a recipe I found cuz I don't want to tap on my phone forever lol.



Keep uncooked quinoa fresh by refrigerating it in an airtight container for up to six months. You can refrigerate cooked quinoa for up to three days.

Ingredients:
1 cup (250 mL) quinoa, rinsed
2 cups (500 mL) green beans, trimmed and chopped
1 can (540 mL) chickpeas, drained and rinsed
1 sweet red pepper, diced
1 cup (250 mL) crumbled feta cheese
Tomato Vinaigrette:
1/3 cup (75 mL) bottled strained tomatoes, (passata)
3 tbsp (45 mL) red wine vinegar
3 tbsp (45 mL) olive oil
3 tbsp (45 mL) liquid honey
1/2 tsp (2 mL) dried Italian herb
1/2 tsp (2 mL) salt
1/4 tsp (1 mL) pepper
1 pinch cayenne pepper


Preparation:
In saucepan, bring quinoa and 2 cups water to boil; reduce heat, cover and simmer for 12 minutes. Fluff with fork and let cool.


Meanwhile, in saucepan of boiling salted water, blanch green beans until tender-crisp, about 3 minutes. Drain and refresh in bowl of ice water. Drain and transfer to large bowl.


Stir in cooled quinoa, chickpeas, red pepper and feta cheese.


Tomato Vinaigrette: Whisk together tomatoes, vinegar, oil, honey, Italian seasoning, salt, pepper and cayenne pepper; pour over quinoa mixture and stir to coat.

Beans and rice are nice. Peasants and the third world don't know how cute we package ancient grains here, and despite the best efforts of affluent nations, they are still alive.

Costco sells organic quinoa. A reasonable big bag for $9(?). I like it. Like u said, low GI and highly adaptable to flavors.


Never tried turtle spunk. Don't think I ever will.

I do, some things reasonably well, and some not so much. But seeing as how, at 18, I didn't know how to boil an egg or operate a can opener, I think I have come a long way.

I've never eaten Quinoa or know what it is but if I can eat it off of Amy, COUNT ME IN!!!

Amy, would spreading a little tomatoes sauce on it be ok??:blush2:
 
This is one of my favourite side dishes. It makes for a wonderful breakfast using a little milk and cinnamon. Guido, replace the pasta and rice with Quinoa, it will do wonders for your waistline and over all health.
 
I just cook it in the rice cooker. Here are some ideas...

Add chicken stock to the wayer
Add honey or syrup and eat insteade of oatmeal for breakfast
Use instead of rice in a stir fry
 
Doing moderately well thanks.

Slowed down on the weight loss, (had a bit of a complication), but still eating healthy. Other than that keeping well. Busy as a son-of-a-bitch though. Not too much time to get on here unfortunately. I was hoping things would calm down at work, but the sped up unfortunately.

Better too much work than no work! Hopefully the complication was just a speed bump.
 
I tried quinoa a few months ago for the first time and nearly gagged. I'm not sure if it was the chef but I sure didn't like the texture. Reminded me of couscous which I can't stand!
