Does anyone know if the footage can be altered from a surveillance camera? I got to know if im loosing it or just paranoid

Editing is easy, good editing takes specialized equipment. Pretty easy to just cut out parts not needed. Pretty hard to create scenes that aren't there. That's takes magic such as special effects used in movies.
Most hotels have survailance cameras and I've been on a lot of them, never bothered me.

In order for the footage to be admissible in most courts it needs to be downloaded by a recognized expert.
This can be but not limited to the police, the professional who installed the system or installs systems.

The courts like having uninterested 3rd parties collect the video evidence. These people can be questioned as to the process used to copy the footage.
Many systems can place water mark on the and in most cases they will keep the original copy to preserve the chain of custody.......That way when called to testify they will have reviewed the footage as they had downloaded it.

Camera evidence not collected by a professional could be easily disputed and tossed out of court.

This exactly.

I had a court case where the applicant submitted emails from myself. The emails were obviously edited and I submitted the originals in hard copy but also had my laptop in court and submitted the emails in original format from my account. It was tossed out and I walked out the winner.

Ask the cops what happens to their body cams before they are used as evidence in court.

They are download by the electronics record tech for the local PD....If they are to be used as evidence the memory card is sealed in and evidence bag and place in the evidence locker. They card is duplicated by qualified techs and presented as evidence....There are in general 3 copies made.

One for the DA or Crown Attorney
One for the Defense Attorney, should it be requested.
One for the Courts.

The Tech is routinely called to testify as to how the evidence is gathered and handled.
