There are two dishes I can't live without. In summer it's tomatoes, brie, and basil pasta. Super easy to make and the most amazing way to enjoy fresh tomatoes. The other is a lime and chipotle marinaded pork loin cooked on the grill. Damn, I'm getting hungry.

Sundry your tomatoes and put in in a jar of olive oil with herbs. Tastes better in the winter than the terrible tomatoes we get.

The entire sauce is olive oil, tomatoes, basil, salt and pepper and chunks of brie. You let it steep for a couple hours, then toss it with the hot pasta. Getting tomatoes and basil straight from the farm is a must for this dish.

Old fashioned meatloaf mama way.

Not an everyday recipe but I make a meatloaf with 3 types of meat that will knock the socks off your guests.

The best part is you can even use the recipe to make burgers and modify for meatballs.
