He ran back out after the assault and stabbed the man. That is not the definition of self defence. That is retaliation and that is a crime.

I get it. Heat of the moment. Still in fear, have to feel like you are doing something.

Even in Florida where stand your ground is legal, it still would have been considered, in my opinion, not grounds for self defence.
