will be cooking a pork butt this weekend low and slow
cooked over carrots, white onion, celery, sugar beets (looked good and fresh, should add a dimension of understated sweet).
I am thinking slicing it maybe 1 inch thick and putting a mix of horseradish, garlic, cumin, salt and pepper on it. Then rolling it back up and tying it. Cooking at 225 for 40 minutes per pound or until the internal temp is 155ish. 10 pounds should be 6 maybe 7 hours
