MADMAN'S POST BUMPER THREAD PART2

When I was a kid, I wanted to take bagpipe lessons but they were too expensive. I have Scottish ancestry and bagpipes give me the chills! I don't like all the music, but some of the old hymns, like Amazing Grace, are awesome on bagpipes. I hate the bagpipes in that AC/DC song though!
 
That reminds me of a joke I enjoyed as a kid.

Who invented the bagpipes?

Man, I haven't had a burrito in at least 2 years. Thanks PS, I know what I'm having for dinner today!

take a nicely marbled rib eye season with salt and pepper

in a hot fry pan sear both sides.

put unsalted butter on one side.
Cook in broiler to mid rare.


Remove and let cool
not thinly slice steak and remove the fat but do not discard.

heat saute pan over low heat and put the reserved fat in it.

Finely dice some sweet onion and a habanero pepper.

saute them in the pan and add a pinch of salt till onions are clear.

add the steak and finely diced tomato to pan and heat.

Serve in a 10 inch burrito shell with a fine chopped cabbage, Colby Jack cheese and cilantro.

To add even more flavor add cumin to the saute pan when sweating the veg.

Zest some lime on the burrito before rolling

Cumin can be too much when over used the same goes for cilantro. Over done cilantro tastes like dish soap but used properly it add a subtle flavor that freshens spiced foods

you can use sauce and garlic but then you need to serve the mixture over eggs up and toasted pita on the side
