Papasmerf, your kneading of the dough reminds me of my childhood when my father would make dumplings. He would do the dough the day before, and the next day, it became a family exercise to make 700 - 800 dumplings. One of my fondest memories actually.

I remember my grandma teaching me how to beat the heck out of batter for yorkshire pudding using a spoon. I guess it was before they invented electric mixers.

Sauce for pizza and spaghetti are 2 totally different sauces.

A nice simple marinara for you is.

Onion
Garlic
Sweet Red peppers
Seeded and pureed Roma Tomatoes
Salt and Pepper
Celery Seed
Alspice
Dry Red Wine
EVOO

Chop one medium yellow onion
5 Cloves of Garlic
2 Sweet Red Peppers
Chopped Basil

On low heat combine above and saute in 2 tablespoons of EVOO
Once Soft add 2 pinches of salt and a pinch of pepper
Add Tomatoes
a dash of celery seed
a dash of alspice
small handful of Basil
1/4 cup wine

Simmer on low for 40 minutes.

Makes a nice quick sauce for pasta.
I like to add some Zucchini to it also.
You may notice measurements are not all that exact and that is how cooking should be done.

Pizza sauce

1 6 ounce can of tomato sauce
dry onion or onion powder
Dried garlic
Honey if needed
Grated Romano Cheese
Oregano
Basil
Crushed red pepper (hot)

In a small bowl
Combine Tomato sauce
2 large dashes of onion
3 large dashes of garlic
Small handfuls of both Basil and Oregano
Dash of crushed red pepper
dash of cheese
Taste to see if it is acidic...if so add a bit of honey to the sauce.
Pinch of Salt
Stir and refrigerate for at least one hour before use
This allows the flavors to marry and thickens the sauce.

Both are simple and pretty basic.

Everything is to taste........Try it by recipe then the next time have fun with it and make it your own.
Just remember good food builds flavors but is simple.
 
You buy or make your own sun-dried tomatoes?. I have a quick fix and way of producing the same results if you want to know,

I am not all that hot for sundried Tomatoes..................I like garden fresh given a choice.
