Thanksgiving turkey to cook. Any suggestions or do you have a sure thing recipe?

I got stuck with cooking Turkey for family and friends. Unlucky draw of the straws, could've been worse. Uncle John is buying cognac and vodka. I worked as a cook for a few years so they all assume I will do a good job :Praying:. I know the basics but want to have a kick ass turkey for all. Ordered a 25 pounder for around 16 of us that I will be picking it up on Saturday.

I searched on the internet and gave me some decent ideas but maybe there is a member or two here that cooks a mean turkey.

All or any replies would be appreciated.
 
Keep it simple

Cook it to a temp or 150F and let rest for 15 minutes before carving.

Just salt and pepper the bird before cooking, toss a couple of stick of butter inside and baste occasionally.
 
Stuff it with cranberries, apples and parboiled rice. It is a hit every year at my place.

no bacon wrapping around the turkey...

ps. An old colleague of mine bbq-ed her turkey. I thought that was interesting but told me it was delicious.

Smoked turkey is awesome.......It takes about twice the time but it is worth it.

You can also roast it on a spit if you have the ability.

yes my colleague told me it took a long time to bbq her turkey and occasionally basted it as well.....result: magnifico.
 
Brine! Soak overnight in a brine bath in the fridge. You can get brine bags from amazon, to make it even easier - ie not spill everywhere in the fridge. Huge difference, so moist and tender.
 
The reason turkeys are dry is people over cook them......165 degrees is the magic number to kill bacteria.

That does not mean cooking it to 165......you cook it to 150, remove it from the oven and let it rest for 15 minutes.........the internal temp will rise to 165 and you will have a succulent bird. The same holds true for chicken.
 
I marinade mine overnight in the fridge in a roasting bag with...

1 C of white wine
1 C of soy sauce
1 C of chicken broth
1 C of oil
6 crushed garlic cloves

Pop it all in a roasting bag with your turkey (remove innards) and let it sit overnight. Empty the liquid out of the bag the next day, insert thermometer then reseal the bag and drop it in the roasting; pop it in the oven. I put the thermometer in thru the cavity and feed the cord out the end of the bag so I can see the digital read out. The bag keeps it super moist and it cooks quicker. To brown it, I cut the bag down to top center, fold it back and turn on the broiler for 7-10 mins. Easy peasy, super moist and the pan doesn't get dried chunks that interfere with drippings gravy...

The roasting bags can be found at the supermarket where they sell the tin roasters and storage containers

Thanks for the advice people. I am mixing a few ideas from you all and will let you know how it comes out. Found a 30.5 lb bird that set me back over $90.
