I do like the face you cook it between paper towels and draw the grease out.
using the rack allows it to drip away and believe it or not it reduces the sulfates in the finished bacon as opposed to frying or micro waving
It does happen quickly. the last time i made bacon dip i overzapped the bacon and ruined the whole thing.
The paper towels make the clean up so easy! but i guess the clean up with a rack would also be no big deal.
Now I'm wishing I bought bacon at the grocery store this morning.
