Here at HUBGFE, we not only practice 'Godwin's Law' and 'Murphy's Law', we have also enacted 'Porky's Law' which states that bacon can and should be mentioned at least once per day.

Does sound great but you said you are sick of Bacon and I use Bacon in my Pasta sauce, unless it is Lent.

I am sick of bacon and would much prefer spicy Calabrese sausage but then again a good tomato sauce is the savior of all ingredients including bacon.

ps.... I'm on a goat cheese kick, I can't get enough of it!

the trouble I have with spicy sausage is often when mass produced, they are flavored with Tabasco.

When I make sausage I use fresh peppers and dried peppers to bring up the heat.

Also often how sausages neglect a balance in flavor.........When you add heat you need to also add sweet.
That way you are not just getting the heat an your taste buds will do a happy dance with every mouthful.
