I do like Chicken....I just find that most people over cook it and dry chicken is not worth eating.

Always cook it skin on.......If you cook it to 160F you might as well accept the fact you have ruined the bird.....While 160 is the magic number for safe poultry, the bird must reach that temp. Not 180, 190 or 200 degrees.
You take the bird out at 145f, cover with foil and let it rest for 15 minutes...It will reach that magic number of 160 in about and you can then serve it.
You will find you have a juicy bird and will be saying THANK YOU PAPA.
