How to roast a pig?

This is a serious question. We're having a little family bbq soon and sure enough; I've been elected to roast the pig. This will be my first time. Do you have any tips, suggestions? I heard nice and slow is best :biggrin2:
 
I like my porchetta crispy on the outside and juicy inside. For that, you will need to sear the skin to lock in the crispy goodness.

Low and slow is the best option for any meat.

the question is what method are you using??
 
I would open with "Pig, you're so fat, you're not just a beep on the radar screen, you're a beeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeep!".

Seriously it is a lot of work but the pay off is tremendous HoneyBee. Don't give up and try it. If successful you'll have Porkapalooza!
 
My only advice is: When you think you have enough charcoal, quadruple that amount. It takes a LONG time and a lot of coals.
 
for the life of me i can't understand why people still do this....i mean really? is it that appetizing to see an animal in its entirety burning over hot coals?

I dated a portugese girl for a while and they had one....only thing was they bought a live pig....they chased it around the backyard with fucking spears etc....reminded me of the scene from lord of the flies....barbarians.....

btw, most of it was thrown out because a) there wasn't enough people to eat it all and b) after a while the "chef" got on with the partying and let it burn to a crisp....
 
I must admit I enjoy a good porchetta sandwich but I like to see it after it's cooked I don't think I could eat and enjoy it if I seen it running around first.

Ya well lots of ppl still do the grizzly thing. This was last Xmas in Jamaica and we were there a couple weeks before that and then we go to the restaurant across the beach in Negril Jah B's and we usually go in the back-yard and ting, and here was the goat tied up to the tree before him throat get slashed and we eat curried goat so I dunno WTF

Because it upsets the neighbors when we eat it raw in the back yard
 
Dammit, stop it already!! I haven't eaten yet and you peeps are making me hungry!!
