I find a decent Hollandaise the hardest sauce to get right. My favorite Eggs Bennie are, unfortunately, at a diner in Hong Kong, and that's a hell of a drive to get to! I always look forward to my Asian trips so I can have breakfast there!

the trouble is getting the heat right and it requires more attention than most sauces.

I use a double boiler to keep a soft heat under it but it still needs alot of siring to keep it velvety.

I find most restaurants, especially the diners, use canned or bottled Hollandaise, heated up on the grill, and it just tastes like crap. I've made the sauce myself several times, and it is really finicky to get right, but always worth the effort.

I like to add a couple of pinches of dry mustard or a 1/2 teaspoon of prepared mustard at the end before I reduce the heat to hold the sauce
