Fresh is best..... When get Lamb from NZ it is packaged and then quick frozen to ship.

Meat looses so much once you freeze it.

Think of most meats, other than beef as farm to table food.
Similar to fish when it comes to how many days before it hits the table.

Beef on the other hand is best when aged naturally.
The quick aging processes used in todays supply ruins the meat, IMHO.

Very true....this is why I rarely eat any meat delieverd from another country. If I was back in NZ, I would definitely order slow-cooked Lamb and Fish and chips as they are incredibly tasty and super fresh.

Bear is another beast that improves if it is aged.

It's so cold today. Temp gauge in the car reads -16 degrees C (3 degrees F). With the wind chill it feels like -25 degrees C which is -OH MY FARKING GOD IS COLD degrees F.
